Well the main difference would be the location (obviously)
The Roman and Mayan empire were both the biggest powers of their time (which were also different) but the Mayans revolved a lot more around religion than the Romans did.

The Roman empire was different from the Mayan empires because the Romans had a religion of their own while Mayans worshiped nature gods.

Some of the gods that were worshipped by the Mayans include sun, rain, etc. Their lifestyle was different as well

Rich Romans are fish, cheese, vegetables, etc while rich Mayans ate meat and the crops that their servants grew. Wealthy Romans lived in separate homes that were made of tiles, cement, stone, and wood. Wealthy Mayans had a private patio.
