One of the characteristics of lipids is that they do not mix with water. If you have ever prepared salad dressing, seen a picture of an oil tanker spill, or attempted to remove a greasy mark with water, you have probably observed this. Lipids are primarily made of carbon and hydrogen atoms, and the bonds between these many carbon and hydrogen atoms are what give rise to their hydrophobic (or "fear of water") character.
A polar covalent link is created when the oxygen and hydrogen atoms of a water molecule interact (see our module Water: Properties and Behavior). Because oxygen atoms have a stronger hold on electrons than hydrogen atoms do, the electrons that make up this bond are distributed unequally among the atoms.
