Polysaccharides are more complex than disaccharides. Polysaccharides are many monosaccarides and disaccharides linked together. Disaccharides are just two monosaccarides linked together.

To break down a polysaccaride, more hydrolysis must occur to break down the bonds between the monosaccharides. Breaking down these many bonds will take more time than just breaking down the one bond (between the two monosaccarides) in a disaccharide.

Polysaccharides have a higher level of complexity than disaccharides. Many monosaccharides and disaccharides are connected to create polysaccharides. Disaccharides are simply the union of two monosaccharides which make it easier to beak down.
