The second trial starts with some water because the measured fluid will stick to the glassware if it's not submerged in water. Since you're already accounting for the starting mass measurement on the scale, and the two fluids will form their own layers, the water will not effect the final result. Make sure to measure from the bottom of the silver-colored material's meniscus and not the water's volume. (Completely ignore the water.)
